Feel Good Food | Pumpkin Spice Cake

Summer is a distant memory as it's time to welcome the changing colour of the leaves, shorter days, cosier nights and, of course, Halloween. This is the perfect autumnal recipe to get keep fueled through the colder months or a great addition to any Halloween party!

250g pumpkin
2 tbs melted lighter spread
2 eggs
3 tbs honey (plus 2 tsp of sweetener if you prefer a sweeter cake)
125g flour
1 tsp Pumpkin Spice Mix
Pinch salt
2 tsp baking powder
Pumpkin Spice Mix:
4 tsp cinnamon
2 tsp ginger
1 tsp cloves
½ tsp nutmeg
1) Combine the flour, spice mix, salt and baking powder in a bowl.
2) In a separate jug combine the eggs, pumpkin, melted butter, honey (and sweetener if using) mix well then stir in the protein shake.
3) Pour the wet ingredients into the bowl of dry ingredients and combine.
4) Pour into a greased/lined cake tin and bake at 180 °C for 30 mins. Check that the cake springs back to the touch in the centre, that will mean it’s baked through.
Enjoy with a dollop of  plain or vanilla yoghurt and a drizzle of light syrup.
