Feel Good Food | Sticky Banoffee Muffins
You will also need
muffin tin and 8-10 muffin cases
Place the dates in a bowl and pour over some boiling water. Leave to soften for half an hour.
Combine the flour, baking powder, spices & bicarbonate of soda in a large bowl.
Mash the bananas with a fork and set aside.
Put 100g of the softened dates in a blender with 100ml of the vanilla shake. Blend well then combine the mixture with the mashed bananas.
Add the eggs, syrup, melted butter and remaining shake to the dates/banana and mix well.
Then add the wet ingredients to the dry and combine gently but do not overbeat.
Divide between pots or cases and bake at 180 deg c for 15 mins.
Serve with some ice cream fro some extra indulgence!
