Feel Good Food | Vegan Choc Orange Protein Rice Pud

We've teamed up again with our intsa- chef, Lizzie Dale for another recipe that vegan and non-vegans alike will love! Rice pudding is hearty and comforting goodness, perfect for them not-so-nice days in January. Our vegan rice pudding is packed with protein, suitable for breakfast, dinner or any damn time of the day you feel like it!

This is also great chilled overnight and served cold. If it thickens too much just add a little water or more Plant Protein to loosen it up again.  This recipe is for one serving but feel free to up the quantities if you want make more goodness!
Ingredients (1 Serving)
330ml Plant Protein Chocolate
50g Pudding Rice
Zest of One Satsuma 
Optional but for extra deliciousness 
Vegan Chocolate
Cacao nibs
Method

Spray a small baking dish with low cal spray.

Combine 50g of pudding rice, a 330ml carton of chocolate For Goodness Shakes Plant Protein shake and the zest of one satsuma. Combine and pour into the dish. 

Cover with foil and bake at 160 deg c for 2 hours. Stir thoroughly after 1 hour. Keep the dish covered with the foil during baking.

Serve with vegan orange chocolate and a sprinkle of cacao nibs.
